'Lamination' is the process of repeatedly folding and rolling butter into dough before baking to create multiple layers for the perfect flaky croissant. It is also the sequence of fine layers that occurs in sedimentary rocks in geology.  Inside, discover how our group uncovered each layer of Fitzroy, or Ngár-go in the native Woi Wurrung language, and why we think croissants are not just delicious pastries but also the perfect analogy for culture.
